It highlights the use of fermentation, preservation, and the potential of often overlooked ingredients, transforming them into something both delicious and edible. By foraging edible seeds, flowers, roots, and leaves from garden, fields, and forests, we explore a vast range of flavours and textures. By experimenting with this harvest we create surprising aromas and unexpected combinations.
